MINCE PIE


Always a Christmas favorite.

Filling:
Mincemeat 2 cups 450 mL
Applesauce 3/4 cup 175 mL
Minute tapioca 1 1/2 tsp 25 mL

Crust:
Pastry for 2 crust pie, your own or a mix 1 1
Granulated sugar 1/4 – 1/2 tsp 1 – 2 mL

Filling: Stir first 3 ingredients together in bowl.

Crust: Roll out pie crust on lightly floured surface. Line 9 inch (22 cm) pie plate. Turn filling into pie shell. Roll out second curst. Dampen edge of first crust. Top with second crust. Trim. Crimp to seal. Cut slits in top.

Sprinkle with sugar. Bake in 400°F (205°C) oven for 30 to 35 minutes until browned. Makes 1 pie.

Mince Tarts: Spoon filling from Mince Pie, above, into 36 tart shells. Filling is especially nice in tarts if run through blender first. Bake at 400°F (205°C) for 20 minutes. Makes 36 tarts.
