ANCIENT ANIMAL BONES
1 rib: 99 Calories; 7.4 g Total Fat (3.3 g Mono, 0.7 g Poly, 2.7 g Sat); 25 mg Cholesterol; 3 g Carbohydrate; trace Fibre; 5 g Protein; 91 mg Sodium







Meaty pork back ribs (cut into individual ribs)
2 lbs. 900 g
Cold water, to cover    
     
Ketchup 1/3 cup 75 mL
Cooking molasses 2 tbsp. 30 mL
Dijon mustard (with whole seeds) 1 tbsp. 15 mL
Pepper 1/2 tsp. 2 mL

Put ribs into large pot or Dutch oven. Cover with cold water. Bring to a boil on medium-high. Cover. Reduce heat to medium-low. Simmer for 30 minutes. Drain well.

Combine remaining 4 ingredients in large bowl. Add ribs. Stir to coat well. Arrange in single layer on large baking sheet lined with greased foil. Bake in 350°F (175ºC) oven for about 30 minutes, turning once at halftime, until browned. Makes about 18 ribs.
