ORANGE GUMDROP LOAF
Nice and moist. Lots of orange throughout.


Gumdrop orange slices, cut up 1/3 lb. 150 g
Chopped dates 3/4 cup 175 mL
All-purpose flour 1/8 cup 30 mL
     
Butter or hard margarine, softened 1/2 cup 125 mL
Granulated sugar 3/4 cup 175 mL
Large eggs 2 2
     
All-purpose flour 1 3/4 cups 425 mL
Fine coconut 2/3 cup 150 mL
Baking soda 1/2 tsp. 2 mL
Chopped pecans 1/2 cup 125 mL
Salt 1/4 tsp. 1 mL
     
Prepared orange juice 1/2 cup 125 mL

Toss first 3 ingredients together in small bowl. Set aside.

Beat butter and sugar together in large bowl. Beat in eggs, 1 at a time.

Stir next 5 ingredients together in separate bowl. Add to egg mixture. Stir.

Stir in orange juice then fruit mixture. Pour into greased 9 x 5 x 3 inch (22 x 12 x 7 cm) loaf pan. Bake in 350°F (175°C) oven for about 75 minutes until an inserted wooden pick comes out clean. Cool on rack. Remove from pan. Wrap in plastic or foil. Freeze up to 2 months or store in refrigerator 2 to 3 weeks. Makes 1 loaf.
