Mediterranean Rice Salad

Ingredients
  

  • 2 cups Western Family long grain white rice
  • 2 tbsp Western Family Extra Virgin Olive Oil
  • 1/4 cup Western Family sliced black olives
  • 1/2 Lemon (zested)
  • 1 Lemon (juiced)
  • 1 Zucchini (peeled & grated)
  • 1 Long English Cucumber (cubed)
  • 1 Hothouse Tomato (cubed)
  • 10 Western Family Cooked White Prawn

Instructions
 

  • Cook 2 cups of rice as per the package instructions. Cool rice completely before continuing.
  • Mix olives, lemon zest in a bowl then add the rice. Mix in zucchini, tomatoes, long english cucumbers, and thawed, cooked white prawns. Then season with 1 tbsp olive oil, lemon juice & salt to taste.
