Hatch Chile Country Chili
A hearty, scratch-made chili. Great to share or enjoy any night of the week.
- 1 tbsp olive oil
- 1 lb Extra Lean Alberta Beef Ground Round
- 1 large onion chopped
- 8 oz mushrooms sliced
- 2-3 medium Hatch Chiles roasted, peeled, chopped
- 3-4 ripe tomatoes chopped
- 1 cup beef or vegetable broth
- 1 tbsp chili powder
- 1 tsp cumin
- Salt & freshly ground black pepper to taste
- ΒΌ cup chopped green onions for garnish
Heat oil in a large pot.
Add ground round and cook until browned, breaking it up with a spoon.
Drain any excess fat.
Add chopped onion and sliced mushrooms to the pot. Cook until softened, about 5-7 minutes.
Stir in the chopped Hatch Chiles, tomatoes, broth, chili powder, and cumin. Bring to a simmer.
Reduce heat to low, cover, and let simmer for at least 20-30 minutes, stirring occasionally.
Season with salt and pepper to taste.
Ladle into bowls and garnish with fresh green onions.
