Garlic scapes are the stalks that grow from the bulbs of hard-neck garlic plants. If left unharvested, the scapes eventually bloom flowers when the garlic plant fully matures. The resulting scapes taste mild and sweet, like chives or scallions, but with a hit of unmistakable garlicky flavour.

Raw they are crunchy like green beans or asparagus

Discard the stringy tip of the scape, then slice into coins or bean length stalks

Use as you would garlic, scallions or green beans
Grill whole, dressings, soups, sauces, stir fry, pizza topping, scape butter etc. Often people make batches of things and freeze enjoy throughout the year.
