Lemon Bars

Ingredients

  

Crust

  • 1 tbsp Lemon Zest
  • ¼ cup Sugar
  • 12 tbsp Butter, room temperature
  • ½ tsp Salt
  • 1 ¾ cups All-Purpose Flour

Filling

  • 4 Eggs, room temperature
  • 1 tbsp Lemon Zest
  • ¾ cup Freshly Squeezed Lemons (approx. 5 lemons)
  • 1 ½ cups Sugar
  • Cup All-Purpose Flour
  • ½ tsp Salt
  • Powdered Sugar for dusting

Instructions

 

  • Heat oven to 350ºF
  • Line a 9×9 baking pan with parchment paper
  • Make the crust, combine lemon zest and sugar and mix, use your fingers to rub the zest into the sugar. Add butter and salt and mix until creamy.
  • Add flour and mix until fine crumbs of dough form, then transfer to the baking pan. Use your hands to press down an even layer.
  • Bake 15-22 minutes until crust is a golden brown.
  • Whisk eggs in a medium bowl. Add lemon zest, lemon juice, sugar and salt, and whisk until smooth. Then add flour and mix until combined.
  • When the crust is baked, immediately pour filling while it's still hot. Then continue baking for 18-20 minutes.
  • Place pan on wire cooling rack and let cool. Refrigerate for 3 hours or overnight.
  • Sift powdered sugar on top, remove from the baking pan, cut, and serve
