Lemon Bars
Ingredients
Crust
- 1 tbsp Lemon Zest
- ¼ cup Sugar
- 12 tbsp Butter, room temperature
- ½ tsp Salt
- 1 ¾ cups All-Purpose Flour
Filling
- 4 Eggs, room temperature
- 1 tbsp Lemon Zest
- ¾ cup Freshly Squeezed Lemons (approx. 5 lemons)
- 1 ½ cups Sugar
- ⅓ Cup All-Purpose Flour
- ½ tsp Salt
- Powdered Sugar for dusting
Instructions

Heat oven to 350ºF

Line a 9×9 baking pan with parchment paper

Make the crust, combine lemon zest and sugar and mix, use your fingers to rub the zest into the sugar. Add butter and salt and mix until creamy.

Add flour and mix until fine crumbs of dough form, then transfer to the baking pan. Use your hands to press down an even layer.

Bake 15-22 minutes until crust is a golden brown.

Whisk eggs in a medium bowl. Add lemon zest, lemon juice, sugar and salt, and whisk until smooth. Then add flour and mix until combined.

When the crust is baked, immediately pour filling while it's still hot. Then continue baking for 18-20 minutes.

Place pan on wire cooling rack and let cool. Refrigerate for 3 hours or overnight.

Sift powdered sugar on top, remove from the baking pan, cut, and serve
