Bacon Wrapped Pork Tenderloin

Savoury pork tenderloin wrapped in bacon, seared and roasted to perfection for a mouthwatering, tender, and flavourful dish.

Ingredients
  

  • 8-10 slices Olymel Bacon
  • 1 lb Pork Tenderloin (500g)
  • 2 tbsp Western Family Liquid Honey
  • Salt & Pepper
  • Western Family Aluminum Foil

Instructions
 

  • Preheat BBQ to 200°C/390°F (medium - high heat)
  • Season the pork tenderloin with salt and pepper.
  • Tuck the thin end of the tenderloin under so the pork is roughly the same thickness from end to end.
  • Sear the pork on all sides until nicely browned. Remove pork tenderloin from the grill and allow it to cool enough to handle.
  • Lay bacon strips side by side on a board, slightly overlapping. There should be enough bacon so when rolled it will wrap the entire length of the pork tenderloin. Wrap the pork tenderloin in bacon. Finish with the bacon seam side down.
  • Use aluminum foil to make a ‘boat’ big enough for the tenderloin. Drizzle honey over the pork and brush over coating evenly. Transfer the tenderloin in the foil boat to the BBQ and close the lid. Turn the heat off on the burner directly under the tenderloin so it cooks in indirect heat.
  • Making use of the honey and juices pooled in the aluminum foil boat, baste the bacon wrapped tenderloin at the 20 minute mark. The pork tenderloin should be ready at around 25 minutes. Check to ensure the internal temperature is 65°C/149°F.
  • Remove from BBQ and let rest for 5 minutes. Baste once more just before serving. To serve, cut into thick slices.
