Borscht
Enjoy vibrant Borscht made from scratch, full of fresh vegetables and classic flavours, perfect for a nourishing meal any time.
Ingredients
- 2-3 medium beets peeled and grated (or diced small)
- 1 medium carrot grated or chopped
- 1 small onion chopped
- 2 medium potatoes peeled and diced
- 2 cups shredded cabbage
- 6 cups vegetable broth
- 2 tbsp tomato paste or 1/2 cup crushed tomatoes
- 1 tbsp vegetable oil
- 1 tbsp vinegar white or apple cider
- Salt & pepper to taste
Instructions
Sauté Base Veggies:
- In a large pot, heat oil over medium.
- Add beets, onion, and carrot.
- Sauté for about 5–7 minutes until softened.
Add Rest of Ingredients:
- Stir in tomato paste and vinegar.
- Add potatoes, cabbage, and broth.
- Bring to a boil, then reduce to simmer.
Simmer:
- Cover and simmer for 30 - 40 minutes, until veggies are soft.
- Taste and adjust salt and pepper.
Serve:
- Ladle into bowls, top with sour cream and fresh herbs if desired.
