Enjoy vibrant Borscht made from scratch, full of fresh vegetables and classic flavours, perfect for a nourishing meal any time.

Ingredients
  

  • 2-3 medium beets peeled and grated (or diced small)
  • 1 medium carrot grated or chopped
  • 1 small onion chopped
  • 2 medium potatoes peeled and diced
  • 2 cups shredded cabbage
  • 6 cups vegetable broth
  • 2 tbsp tomato paste or 1/2 cup crushed tomatoes
  • 1 tbsp vegetable oil
  • 1 tbsp vinegar white or apple cider
  • Salt & pepper to taste

Instructions
 

Sauté Base Veggies:

  • In a large pot, heat oil over medium.
  • Add beets, onion, and carrot.
  • Sauté for about 5–7 minutes until softened.

Add Rest of Ingredients:

  • Stir in tomato paste and vinegar.
  • Add potatoes, cabbage, and broth.
  • Bring to a boil, then reduce to simmer.

Simmer:

  • Cover and simmer for 30 - 40 minutes, until veggies are soft.
  • Taste and adjust salt and pepper.

Serve:

  • Ladle into bowls, top with sour cream and fresh herbs if desired.
