Grilled Watermelon and Feta Salad

Ingredients
  

  • 4 slices seedless watermelon about 1-inch thick
  • 1 tbsp olive oil
  • ½ cup feta cheese crumbled
  • ¼ cup fresh mint or basil chopped
  • Juice of 1/2 lime or lemon
  • Optional: Balsamic glaze for drizzling
  • Salt & black pepper to taste

Instructions
 

  • Preheat grill or grill pan to medium-high.
  • Brush watermelon slices lightly with olive oil.
  • Grill each side for about 2–3 minutes, until grill marks appear.
  • Cut grilled watermelon into chunks or triangles.
  • Arrange on a plate and top with feta, herbs, and a squeeze of lime.
  • Drizzle with balsamic glaze (optional), and season lightly with salt and pepper.
