Hatch Chile Country Chili

A hearty, scratch-made chili. Great to share or enjoy any night of the week.

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb Extra Lean Alberta Beef Ground Round
  • 1 large onion chopped
  • 8 oz mushrooms sliced
  • 2-3 medium Hatch Chiles roasted, peeled, chopped
  • 3-4 ripe tomatoes chopped
  • 1 cup beef or vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt & freshly ground black pepper to taste
  • ¼ cup chopped green onions for garnish

Instructions
 

  • Heat oil in a large pot.
  • Add ground round and cook until browned, breaking it up with a spoon.
  • Drain any excess fat.
  • Add chopped onion and sliced mushrooms to the pot. Cook until softened, about 5-7 minutes.
  • Stir in the chopped Hatch Chiles, tomatoes, broth, chili powder, and cumin. Bring to a simmer.
  • Reduce heat to low, cover, and let simmer for at least 20-30 minutes, stirring occasionally.
  • Season with salt and pepper to taste.
  • Ladle into bowls and garnish with fresh green onions.
