Slow Cooker Beef Stroganoff

Slow Cooker Beef Stroganoff

Equipment

  • 1 Slow Cooker

Ingredients
  

  • 2 lb Alberta Beef Stewing Cubes
  • 1 tsp Western Family Extra Virgin Olive Oil
  • 1 cup sliced Mushrooms
  • 2 cans Western Family Cream of Mushroom Soup
  • 1/4 cup Western Family Beef Broth
  • 3 tbsp Western Family Worcestershire Sauce
  • 1/2 tbsp Western Family Onion Powder
  • 1/2 tbsp Western Family Garlic Powder
  • 7 cups uncooked Western Family Egg Noodles
  • 1/2 cup Western Family Plain Greek Yogurt

Instructions
 

  • Heat Western Family Extra Virgin Olive Oil over medium high heat in a large pan. Season the Alberta Beef Stewing Cubes with salt and pepper and add to the hot pan. Brown for 3-4 minutes on each side.
  • Add the browned Alberta Beef Stewing Cubes to your slow cooker. 
  • Add Mushrooms to the hot pan and cook for 3-5 minutes or until browned. Add beef broth to pan and scrape up any caramelized bits. 
  • Add Mushrooms, Cream of Mushroom Soup, Beef Broth with scrapings, Worcestershire sauce, garlic powder, onion powder to the slow cooker. Cover and cook on LOW for 8 - 9 hours or until the beef is fork-tender.
  • During the last 20 minutes of cooking, stir in the Plain Greek Yogurt. Then cook and drain the egg noodles according to their package.
  • Serve the Beef mixture with the noodles and season with salt and pepper as desired.
