Cranberry Balsamic Chicken Thighs & Drumsticks
Ingredients
- 1 lb Fresh Alberta Chicken Thigh & Drumstick Combo (approx. 4)
- salt & pepper to taste
- 1 tbsp Western Family Extra Virgin Olive Oil
- 1 can Western Family Whole Berry Cranberry Sauce
- 1/4 cup Western Family Balsamic Vinegar
- 2 tbsp Western Family 100% Canadian Creamed Honey
- 1 tsp Western Family Parsley Flakes
- 1/4 tsp salt
Instructions
- Sprinkle chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken, skin-side down, reduce heat to medium and cook, undisturbed, until golden brown, about 7 minutes. Remove all but a tablespoon of fat from the pan.
- Turn the chicken over and add cranberries, vinegar, honey, and thyme to the pan. Bring to a simmer over high heat, then reduce heat to maintain a simmer. Partially cover and cook, stirring occasionally for approx. 12 minutes or when your meat thermometer reads 165F at the thickest part of the thigh.
